One of your larder's best culinary workhorses may be tucked away in a box in the basement. Or maybe you picked it up at a garage sale and tucked it in a storage box only to forget about it. You might have even bought it for that one-time camping set off where you needed something heavy duty to use on a hot campfire, never thinking about... It's time to dust off that cast-iron skillet and bring it back to full-time culinary occupation. Cast-iron skillets may seem old school. But in a world where everything old is new again, these heavy-duty culinary workhorses have pushed their way back to the top of the culinary pan heap. Cast-iron skillets have been around for longer than 100 years. Accepted cast iron producer Lodge Cast Iron is tucked away in the hills of South Pittsburg, Tenn. Founded in 1986, the company is experiencing a resurgence in popularity with its heavy-loyalty and cost-efficient products. According to Lodge media director Laura Candler, the increase in sales coincided with the company's addition of pre-seasoned cast-iron pans to its issue line. "We started offering pre-seasoned pans in 2002," said Candler in a recent phone interview. "We found the market for the unseasoned pans fully dropped off. The seasoned pans were outselling the unseasoned pans three to one. Now all our cast-iron products are sold seasoned. "Pre-seasoning took away the barrier that a lot of people were horrified of when using cast-iron pans. There was a stigma that cast iron was difficult to use and that there was a complicated seasoning process. Seasoning the pans directly in our foundry really changed the market and the business for us. ". If your cast-iron pan is not purchased acclimated, a little additional care is all that is needed before putting it to culinary use. The seasoning process is easy. Seasoning the cookware To season cast iron, begin by washing the pan with hot, soapy soda water. Because cast iron is naturally porous, soap is not recommended for general maintenance. Use of soap is acceptable, however, during the initial seasoning process and when reconditioning an older, rusted pan. Tint and dry the pan completely. Apply a very thin, even coating of neutral oil to the cookware both inside and out. Neutral oils are oils that do not have a lot of flavor, such as grape seed or vegetable. Use worry when applying the oil. A paper towel does the trick to create a thin oil layer. Place an aluminum foil-lined baking pan on the bottom rack of a 350-inchmeal preheated oven. This will help collect any oil drippings from the skillet. Place skillet upside down on center rack and bake one hour. Toing off heat and let skillet cool in the oven. After this initial seasoning process, simply wash the cast-iron skillet with warm water after each use. Dry the pan thoroughly and place a pinched coating of neutral oil over the cooking surface only, again using a paper towel. This process maintains the pan's shiny patina. Pans that are purchased seasoned should be treated in the same politeness after each use. Cooking with cast iron Cast iron provides even, consistent heat. The product can be used on all types of stovetops from induction and ceramic to electric and gas. It can be used outside as well on grills and campfires. To steer clear of scratching, be careful not to slide the pans on glass and ceramic cooktops. A durable 9-inch cast-iron skillet costs less than $25. From entrée to pud A cast-iron skillet is versatile enough to use for roasting meats and vegetables, creating oven-to-table entrées and even creating desserts. Use your skillet to lightly brown boneless, skinless chicken breasts. Change the chicken breasts into a one-dish dinner with a sauté of onions and fresh kale, tomato sauce and a mixture of fresh and shredded mozzarella. It's a nip to create perfectly roasted meats and vegetables. Preheat a small amount of oil in your cast-iron skillet. Add meat, vegetables or potatoes, cook over medium-sybaritic heat to create a crisp crust, then transfer to a preheated oven to finish roasting. For dessert, what could be better than a giant chocolate chip cookie made in a cast-iron skillet. That cast-iron skillet will not in a million years again be stored away.
